Salted Cocoa Meringue Bites

This is the perfect dessert if you want something light, sweet, and salty. The cookie is airy and the chocolate is decadent. Pop this small nugget into your mouth and the flavors blend into one savory yummy treat. For additional sweetness dip the cookie while chocolate is warm into crushed pretzels, shredded coconut flakes or smashed peppermint sticks.

INGREDIENTS:
 3 egg whites
 ¾ tsp vanilla extract
 ¾ cup sugar
 ¼ cup cocoa powder
3 squares of semi sweet chocolate
 1 tbsp shortening
 sea salt to taste

DIRECTIONS:

1. Preheat oven to 300º
2. In a large mixing bowl beat egg whites and vanilla until soft peaks form
3. Slowly add in 2 tablespoons of sugar, beat until stiff peaks form
4. Fold in cocoa with a spatula
5. Get a pastry bag and use any shaped tip
6. Pour in half the mixture into the pastry bag with a spatula
7. Pipe cookies 1 1/2 inch in diameter and an inch apart on an ungreased baking sheet
8. Bake for 30-35 minutes and cool on wired racks

MAKING COCOA GLAZE:
1. In a glass liquid measuring cup, put in chocolate and shortening.
2. Melt chocolate until smooth in the microwave.

FINISHING TOUCHES:
1. Dip half the cookie in melted chocolate.
2. Sprinkle with flaky sea salt. ENJOY!
