Moist Cocoa Cake

This is a simple light cake where powdered sugar reigns over frosting. You can cut into bars or leave as a square cake.  Thank you to Taste of Home for the recipe.

 

INGREDIENTS:
 1 ½ cups all purpose flour
 1 cup sugar
 3 tbsp baking cocoa
 1 tsp baking soda
 6 tbsp vegetable oil
 1 tbsp white vinegar
 1 tsp vanilla extract
 1 cup cold water
 1 tbsp powdered sugar

DIRECTIONS:

1. In a large mixing bowl whisk together flour, sugar, cocoa, baking soda and salt
2. Make 3 wells in the mixture with the back of a spoon
3. Pour oil in one well
4. Vinegar in 2nd well
5. Vanilla in 3rd well
6. Slowly pour cold water over all
7. Whisk until throughly combined
8. Grease an 8 inch pan
9. Pour in mixture
10. Bake at 350º for 30-35 minutes or until toothpick comes out clean
11. Cool on wire rack
12. Dust with powdered sugar when cool
