While you watch Team USA go for the gold, enjoy eating this simple dessert that shows your team spirit.
Inspired by growing up in a ski town that hosted the Winter Olympics I had to show my gratitude to our Olympians with this tasty dessert. This golden cake is airy and light while the cream cheese frosting wraps the raspberries and blueberries in sweetness. Can be made in advance so you have time to watch your favorite Olympic athlete. You can easily change out the fruit to support your countries colors. A big thank you to Dinner with Julie for this delicious recipe.
1. Preheat oven to 375º
2. In a large bowl beat eggs and sugar until thick and pale yellow
3. Beat in water and vanilla
4. Fold in flour, baking powder and salt
5. Grease a 10x15 inch baking sheet and lay parchment paper down
6. Pour batter evenly
7. Bake for 12 -14 minutes, test with toothpick
8. Let cool 10 minutes to the touch
9. Remove from pan holding parchment paper
10. Lay flat surface and frost
11. Add blueberries and raspberries or any fresh seasonal fruit
12. Start rolling tightly and peel off parchment paper as you roll
13. Using a sharp knife cut into Olympic Rings
