Lemon Bars

Summer screams LEMON BARS! Well, at least that’s what my Mom believes. Tart yet sweet. Crispy yet chewy. It’s the perfect combination, like Yin and Yang. This is probably my favorite dessert to make in the summer. Every bite is a morsel of perfection. Thank you to Taste of Home for this amazing recipe!

  

INGREDIENTS:
CRUST:
 1 cup flour
 ½ cup softened butter
 ¼ cup confectioners' sugar
FILLING:
 2 eggs
 1 cup sugar
 2 tbsp flour
 ½ tsp baking powder
 3 tbsp lemon juice
 1 ½ tsp grated lemon peel

DIRECTIONS:
1. Preheat of to 350º
2. In a small bowl combine the flour, butter, and confectioners' sugar
3. Grease an 8-in baking dish
4. Press the crust into the bottom of the dish
5. Bake for 20 minutes

1. For the filling, in a small bowl beat eggs
2. Add the sugar, flour, baking powder, lemon juice, and lemon peel
3. Beat until frothy
4. Take crust out of oven and pour the filling over the crust
5. Put back in the oven and bake for 25 minutes or until a toothpick comes out clean
6. Cool for 15 minutes

Optional:
1. While the lemon bars are cooling, whip heavy whipping cream until it forms stiff peaks
2. Put into a pipping bag with any tip
3. Make swirls on lemon bars and to finish it off place a mint leaf on top
