Fall is in the air, but I’m still yearning for the taste of summertime. One of my go to citrus fruits to bake with are lemons. Probably because they are so refreshing. What is your favorite citrus to bake with?
If you said lemons, then this recipe is right up your alley. Imagine eating a gently stacked tower of paper thin, airy crepes, layered with sweet lemon whip cream, sprinkled with powdered sugar, and a tower of fresh blueberries rising above it all? Now that is what I call delish.
DIRECTIONS:
Crepes
1. Melt butter in a microwavable bowl
2. Whisk together eggs, sugar, milk, and butter until smooth
3. Fold in flour
4. Grease a pan to prevent sticking and turn burner on medium heat
5. Take a 1/3 cup of the batter and pour it into the middle
6. Flip after a minute
7. Repeat until all the batter is gone
Lemon Whip Cream
1. Whip heavy whipping cream until stiff peaks form
2. Fold in lemon juice and zest
Stacking Crepes
1. Take a circle cookie cutter and cut the crepes
2. Stack one crepe then whip cream
3. Repeat until all gone
4. Sprinkle powdered sugar and blueberries on top
5. ENJOY
