For Mother’s Day, I asked my Mom what are three of her favorite flavors. In no particular order she said, “lemon, coconut and rosemary”. I then proceeded to track down a recipe that would marry these ingredients for the perfect Mother’s Day cake.
This naked (no frosting on the sides) cake is unbelievably good. All the flavors are in harmony. Three spongy lemon cakes, layered with airy whipped vanilla buttercream and coconut strips, drizzled with sweet lemon honey syrup and decorated with sprigs of rosemary makes this extra special.
